The wine cellar

For generations our family has produced quality grapes and wines, in our vineyards and in our four millstones, that can be still visited. From our roots was originated the idea to create a new and modern wine cellar to produce wines that could connect past, present and future, tradition and technology.   PHASES OF PRODUCTION – manual grape harvesting and transport in small cases; – manual grapes selection in vineyard  and in wine–cellar on a belt conveyor  before the   pressing of the grapes; – picking of  grapes from a bunch; – soft pressing and transport of the pressed grapes through a peristaltic pump and their cooling; – natural fermentation with inoculation of highly  selected yeasts  in self-wine producers without the use of pumps; – fermentation under controlled temperature, computer assisted; – gentle pressing, computer assisted; – storage in  tanks under nitrogen and continuous control of the temperatures; – filtration and refining in steel,  esteemed oak barriques and tonneaux  and bottles;
